What's Going On?

Grandma and Grandpa did babysitting duties over the July 25th weekend. Grandpa did his best to wear out little Ilia by taking her to the Nike campus on Friday. Here she is at the lake looking for the ducks.

Saturday Ilia went to The Enchanted Forest outside of Salem and then we stopped at Chuck E. Cheese for dinner.

And this is what our little grand-daughter looked like after all the excitement. She also "camped out" in the wilds of our backyard both nights and slept until 7:30 each morning.

Recipe of the Month:

Asian Beef with Snow Peas

1/4 cup and 2 tablespoons soy sauce
1/4 cup rice wine
2 tablespoons brown sugar
1 teaspoon cornstarch
2 tablespoons vegetable oil
2 tablespoons minced fresh ginger root
2 tablespoons minced garlic
2 pounds beef round steak, cut into thin strips
1 pound snow peas

Directions

In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.

Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.
